Meets regularly with lead person/chef to coordinate daily food production in a timely manner to meet the customer’s demands.
Breakfast duties include: making coffee, setting up continental breakfast buffet, including appropriate signage for specials and non-menu items. Tear down breakfast bar in preparation for lunch.
Duties include: slice meats, cheeses and vegetable garnishes per daily production sheet. Build sandwiches to order and pre-mades for lunch period. Prepare salads, condiments and other items for salad bar set-up as well as pre-made salads for grab-n-go and catering luncheons. Prep dessert items and set up on line. Set up salad and deli bar with appropriate serving utensils per portion control guidelines.
Put out proper signage to promote daily specials and other point-of-sale items for the customer. Review daily specials, combos, substitutions w/ manager or lead person prior to lunch service.
Clean-up duties include: After lunch assist w/ breaking down the line and sanitizing all the serving utensils and servery area for next day. Properly store, date and label leftovers--check w/ lead person if in question. Sweep and mop floors. Take trash to designated area.
Ensure items pulled for next day’s beverage coolers, condiments etc. for next day.
